It’s been said that food makes a culture. We invite you to find out if it’s true on our 8 day culinary cruise of the Seychelles. 

Sailing with celebrated chef Josh Thomsen, you’ll explore local fish markets, enjoy cookouts on private beaches, taste test local rum, and cook up a Seychellois-cuisine storm under Chef Thomsen’s guidance. 

You’re in safe - and tasty - hands on our culinary cruise. Thomsen has over 20 years experience cheffing at some of the world’s best hotels and restaurants, and is excited to share his passions by taking you on a culinary journey. 

Seychellois cuisine, also known as Creole, combines flavours from French, Chinese and Indian dishes, expertly mixed with herbs and spices from the island. This is a chance to experience the taste of the Seychelles - but you’ll also come away with a real sense of what food means to this Indian Ocean island community.

Day 1 | Saturday

Mahe (Victoria port, Inter island Quay) - St. Anne

We’re sure you know about the stunning beaches in the Seychelles, but how much do you know about the island’s cuisine? Today, your culinary cruise of the Seychelles begins at a local market where we’ll pick up fresh fruits, fish, herbs and spices  to take back to the ship, ready to throw into the onboard pan. You and your taste buds can thank us later. Overnight at anchor.

Day 2 | Sunday

St. Anne - Curieuse

This morning we set sail for the uninhabited island of Curieuse where you can explore the mangroves, take a guided walking tour, meet the giant tortoise, or go swimming and snorkelling in the peaceful waters. One thing you won’t want to miss, however, is Chef Josh cooking up a beach storm - he’ll be seasoning, basting and barbecuing the fish we bought at the market yesterday. Our mouths are watering already. Overnight at anchor.

Day 3 | Monday

Curieuse - Cousin island - Anse Lazio

After a stop at Cousin Island, we’ll sail onto one of the most beautiful beaches in the world - Anse Lazio. Here, we have a special treat prepared for you. Drag yourself away from the soft white sand, make your way under the jungle canopy, find the hidden steps, and follow them to the top. Welcome to the Honesty Bar! The bar gets its name as there are no staff - it’s a help yourself and leave the money in a pot kind of deal. Here, its owner will share his knowledge of the island, and introduce you to the local Takamaka rum and Seybrew beer. Overnight at anchor.

Day 4 | Tuesday

Anse Lazio - Aride - St. Pierre - Baie St. Anne/Praslin

Join experienced island rangers for an early morning walk to the top of the island: the view from here makes the early start worthwhile. Aride* is known for its many indiginous species; your guide will point them out as you walk. At lunchtime we set sail for St. Pierre Island where all you have to do is enjoy the sea, taste the rum (again) and sunbathe on deck. Come evening, get dressed for Creole night on board, where you’ll taste traditional dishes and will have the chance to  waltz, polka and mazurka with traditional Creolean dancers. Sunset sail to Baie Sainte Anne, Praslin. Overnight at dock.

*Aride island may be closed by local authorities in May-June-July. During this time, weather permitting, Variety Cruises Captain will be calling at equally beautiful locales, visiting Cote D’Or or Anse Georgette.

Day 5 | Wednesday

Baie St. Anne, Praslin - Felicite - La Digue

Discover the green heart of Praslin with our optional morning tour to Vallee de Mai, often described as the Garden of Eden. Then, it’s time to set sail for wherever the wind takes us. Conditions dependent, we’ll sail to either Felicite or Grand Soeur. Either way, you’re guaranteed an afternoon of sun, sea, and sand - along with a special cooking class on board. Chef Josh is keen to experiment with octopus, lobster, and shrimp, as well as garlic, chilli, and coconut milk. Hello tingling taste buds! Evening sail to La Digue. Overnight at anchor.

Day 6 | Thursday

La Digue - Moyenne Island

In La Digue this morning, our knowledgeable guides will take you on an optional tour of a coconut oil mill at L’Union Estate Farm - the mill is operated by ox. Come afternoon, unwind at another of the world’s most beautiful beaches: Anse Source D’Argent. Late afternoon sail to Moyenne Island, overnight at anchor.

Day 7 | Friday

Moyenne island - Mahe - Inter Island Quay

Time flies when you’re well-fed. Your culinary cruise of the Seychelles is nearly at an end, but not before a day filled with foodie treasures. For lunch, Chef Josh will work his culinary magic as he cooks up a delicious octopus curry to be served al fresco on the beach. Wash it down with a local beer, or a final swim in the sea. Late afternoon, we’ll sail back to Mahe and enjoy our signature Captain’s Farewell dinner with live music. Overnight in Mahe.

Enjoy breakfast on board before disembarkation. If you’re not quite ready for your time to end yet, join us on today’s optional tour of Takamaka Rum Distillery.

Highlights

Chef Josh, our on board guest chef!


When Chef Josh Thomsen’s sixth grade yearbook said ‘future chef’, he never doubted it. Thomsen has gone on to prove it:  a graduate of the prestigious Culinary Institute of America, time working under James Beard award winning chefs, and accolades for restaurants he’s helmed granted by Condé Nast Traveller, Esquire, Forbes, and more. 

He’s worked at some of the USA’s best hotels: Hotel Bel-Air, MGM Grand, Pebble Beach, The Venetian - and some of its  best restaurants, too: Tao, Pinot Bistro, Simon Kitchen & Bar, and French Laundry - the latter named  ‘the most exciting place to eat in America’ by the New York Times. 

Not content with his star-studded CV, Thomsen went on to open Agricola restaurant in New Jersey. Another New York Times favourite: one they described as ‘close to nature and perfection’. Here, Thomsen also co-authored a cookbook. 

It’s safe to say, then, that Chef Josh Thomsen knows food. We couldn’t be happier to partner with him on our culinary cruise of the Seychelles.

Back on deck, enjoy deck-side BBQ; take out the kayaks, snorkel or swim from the ship's swimming platform and marvel at hundreds of species of rainbow-hued fish, as well as manta rays, spinner dolphins and green and hawks-bill turtles. or dip into the mini-spa on the lower deck for some seaside pampering. Step in tune with nature or swim with the turtles while enjoying an intimate floating home that offers every comfort.

The cruise will include onboard cooking demonstrations, cookouts on a private beach, food market and rum tours that will show off the culture and the amazing "Seychellois cuisine".
